Our Mountain Water Process Decaf showcases premium Arabica beans from the highlands of Chiapas, Mexico, grown at around 1,000 metres by smallholder farmers who cultivate with care, tradition, and a deep connection to the land. The relatively low elevation produces larger beans, known for their smooth body and gentle acidity.

Harvested from Bourbon, Caturra, Typica and Catuaí varietals, the coffee is brought to the San Cristóbal de las Casas and Yajalón buying stations in northern Chiapas, regions celebrated for quality and consistency. From there, the beans undergo the Mountain Water Process.

What Is the Mountain Water Decaffeination Process?

The Mountain Water Process is a chemical-free method that uses pure water from Mexico’s highest mountain, Pico de Orizaba, to gently remove caffeine while preserving the coffee’s original flavour. The green beans are soaked, caffeine is filtered out, and the flavour-rich water is reused, maintaining the bean’s natural character with 99.9% of caffeine removed. It’s a clean, safe, and sustainable process for those who want decaf without compromise.

The green beans are freshly roasted in the UK to a mellow medium roast. This decaf reveals a comforting sweetness with milk chocolate, toasted nut, and soft cacao notes. As a filter, it’s clean and moreish. With milk, it becomes silky and soothing, ideal for relaxed mornings or calming afternoon cups.
